Fattorie Garofalo’s Ricotta di Bufala Campana PDO is produced with the “sweet whey” coming from the breaking of the curd destined for the production of Mozzarella di Bufala Campana. The milk comes exclusively from buffaloes raised in the areas allowed by the Consortium and the whey is transformed within 24 hours from its extraction.
The product has very ancient origins strongly related to the production area: one of the first proof of buffalo ricotta is in fact found in a cookbook published in 1570 by Bartolomeo Scappi, cook of the Papal Court, dedicated to the gastronomic specialties of the Italian peninsula.
Ricotta di Bufala Campana PDO has a pure white color and its texture is soft and creamy. The taste is delicate and characterized by the sweetness of the fresh notes of buffalo milk.
It is a versatile product suitable for all needs: it can be tasted natural but its use is also recommended in recipes, especially for sweety preparations and as an ingredient in savory pies.
